Walmart Was Naked

Last night we went to the store to grab a few last minute items for our new dish night. Now usually this is not a big deal and things would be cool but here in Winston Salem we are currently under a winter warning advisory till tomorrow.  By the time my hubby got home it was already snowing for at least two hours and it was starting to accumulate on the ground.  When we got to Walmart the parking lot was filled.  I had to fight to get a cart because they were all gone and the line were so crazy.  I looked at Steve and wondered if this was Y2K happening all over again.  It was like we were in 2011 and everyone was worried about it becoming 2012.  I couldn’t believe my eyes.  I mean how much snow could we possibly get.  Since we have been living here for the two winters it has snowed twice.  This is only the third time.

So I decided we needed to hurry and get out this mess soon.  When I started to walk around the store I started to realize what was really happening.  Walmart had no ground beef on the shelf.  For that matter they only had about 15 packages of beef in the section.  All there store brand white bread was gone.  Even all the baked goods were gone.  I couldn’t believe that it was just so bare.  So we continued to walk around to get our items and all the cheese was gone, all the soy milk we had to fight to get Kennedi some whole milk in the jug and people were grabbing those as fast as the stock person was putting them on the shelf.  All the butter was gone and most of the margarine.  I stated to think it was the end of the world and here we were in one of the biggest stores that carry food and Walmart was naked.  The shelves were so bare you could see the ‘Made in China’ stamp on all of them.  Juice, cereal even the fresh produce was picked over and gone.  I was surprised they still had water and toilet paper :).  I was just ready to leave that store and get home.  Because to us it wasn’t much especially the last time we went to Baltimore it was in the middle of a snow storm so this couldn’t be anything.  However we have learned that people here don’t like to do anything when it snows.  Its like the whole world is coming to an end so we just decided to hurry up and get home.

We woke up this morning and the lights were still on, although you are not hearing much traffic on the road.  A truck drives by about once every five minutes but would you believe to me we didn’t get that much snow.  Its funny because I won’t allow Steve to go out in this weather.  LOL I guess I am getting to be like the rest of Winston Salem this is just too much snow after having 70 degree weather on Wednesday.  Check out some pics of our little snow storm.

Happy Saturday.  I will be back tomorrow with new dishes from our South Florida Night.  I should also mention this little storm put a huge dent in my menu plans so we are not having any Daiquiri’s like I planned but I am still trying to do the rest.

An Affair With Lamb

So a few weeks ago I was doing our monthly grocery shopping and I came across a great deal in the meat section.  There was one package of lamb breast (ribs ) sitting in the section and it was such a great price I had to buy it to try it.  I have had lamb before once in my entire life when Steve and I were dating  he took me to this restaurant in Towson and I had rack of lamb.  I have always wanted to attempt to make the dish but I was always too worried to try it and as time passed on I got worried about spending the money to buy the lamb and then ruin the dish.  So I was scared.  I am really  not the rib authority in our house.  I divert all ribs and stuff like that to the hubby.  Well then I had to figure out what to do with them also.  Well I just decided to BBQ them in the oven.  I cooked them low and slow for about 2 hours and then I uncovered them and raised the heat up to finish it off.  I used a dry rub that Steve created for a pork loin we had a few weeks back and it was excellent.  It was very different there was lots of fat because I didn’t trim it off, I kept it to lock in the juices and not dry the meat and that helped but I think it was great and Kennedi loved it.  She kept calling it chicken but the cleaned all the meat off the bones.  Check out the finished dish.

I hope that Mr. Pork forgives me for stepping out on him with Mr. Lamb but it was a good affair and I think I am gonna see Mr. Lamb again so he will just have to get used to it.  Next time I am gonna try something a little different but who knows we will see.

P.S. I tried the black beans and rice dish again and it worked this time.  I think it was a good look.

Success and Failure

So last night was Mexican Dish Night in the Stephens house and I was excited about it all day.  I should have known that it would a task when I started to work on some other stuff before I started to cook and immediately got a headache of a lifetime.  So needless to say things just wasn’t looking good when it was time for me to start cooking.  First off I didn’t think I would be doing this but Steve asked for cinnamon rolls for breakfast and so I decided to make them.  Usually I make this ooey gooey cinnamon bun recipe but it calls for pecan and since my brother in law doesn’t eat nuts I was trying to make something we all could enjoy and I know Steve loves Cream Cheese Frosting so I found this recipe and I decided to give it a shot.  Its called Clone of a Cinnabon. Well I should start by saying I was worried because I only had two pack of yeast left.  I couldn’t believe it I call my self a baker and I was out of yeast pretty much.  This recipe is also a bread machine recipe and I don’t own one of those either (I need to put that on my shopping list along with a new griddle and my stove top grill).  I looked at the comments and so I decided to still make it without the machine.

First off I followed on suggestion and put the yeast in the milk but I didn’t add the sugar.  Like I said I am a baker so I knew it sounded odd but then I saw a recipe that Paula Deen did it that way so I figured if Paula could then so could I.  Well I didn’t like the result it just seemed to me the dough would not rise enough but I continued the recipe anyhow.  The dough to me was very heavy so I warned Steve it may not be the best.  I let it proof for an hour and then rolled it out and made the rolls to be baked and let that rise for another half an hour and then baked them.  To my amaze they were amazing.  They were very heavy and a lot like Cinnabon so I was happy and so was Steve.  Here is a photo of the finished product.

So we are moving on to dinner remember I was gonna make Mexican Sweet Bread well since I used all the yeast in the morning that was out of the line up so I replaced it with Churros. This was another feat at the start because again as a baker I don’t own a pastry bag or any cake decorating items for that matter so I had to improvise.  I used a small pastry tip I had gotten from an old set I grabbed from the dollar store years ago.  It was cheap and didn’t last long but I still have the plastic tips so I ended up using an old disposable baby bottle insert and putting the dough in there to place oil to fry.  It was time consuming but so worth it.  They ended up tasting great.  I loved it and will have to try it again.  Here are some pics of that process.

So while I was making the Churros I was also making the black beans and rice and baking my Enchiladas at the same time so that it would all be ready at once.  Let me start with the Enchiladas because this is the end of the success of new dish night.  They were great.  I improvised on the recipe a bit.  I used a pack of chicken parts instead of just the breast meat.  Steve loves dark meat better and it saved me from having to buy more just for this recipe.  I deboned the breasts and thighs and cut them into pieces and seasoned them and let them sit for a while then I sauteed them and put them tortilla and did the rest of the steps and put them in the oven.  The were so hearty and full of meat and filling.  I was shocked that Steve could eat all his but I couldn’t even eat too it was just that filling.  It was an absolute success I would have to give it 6 stars, yes I know its one above but it was just that good.  Here are some pics of the finished product.

Extras moved to another dish

So finally we get to the black beans and rice.  Boy did I fail at this dish and it was a hard lesson to learn but from here on out I am gonna follow Sandra Lee and so Semi-Homemade.  I had black beans that I brought from the store in the bag, so it was uncooked.  I followed the directions and soaked them over night to help with making them softer.  Well it was time to make the rice and I didn’t for one minute think I should have cooked the peas earlier.  It was a disaster.  By the time the rice had cooked the peas were still hard and by the time I was ready to serve dinner there was no way the peas would be soft enough.  It was an error on my part of not cooking them first and thinking it was like the peas in a can.  So from here on out if a recipe calls for peas they are coming from a can.  I am still going to post a picture of the dish.

So there you have it the ups and downs of Mexican Dish Night.  New week I am going to make Key Lime Pie and Try to find some Florida dishes to make it Florida Dish Night.   Look out for the blog on what I plan to make.

New Dish Night 1/22/10

We are here again nearing new dish night.  I was thinking long and hard about what to do this time and I just couldn’t focus on one thing and then out of no where it hit me – Mexican Night.  Steve always talks about how he loves Mexican food and how since he moved he can’t get any of it so I started to browse around my favorite recipe site and found two dishes that I want to try.  First up is Angela’s Awesome Enchiladas

Then I thought I need a good side dish to go with this and I already have rice and black beans so it was just about finding the right recipe.  I am going to use this easy Black Beans and Rice recipe.

Last of all I wanted to make a desert and I didn’t know what I could make.  I kept thinking of things to try and I remember this bread I would always see and was curious about so I decided to look and I found it.  I am also going to take a long shot and make Conchas (Mexican Sweet Bread).

Sinfully Good

So I posted my updated blog on Sunday about our new dish night and said to look out for the new dish I would be doing on Saturday well to my amaze that came much more sooner than later.  That same day my husband asked me to bake him a molten chocolate cake.  I was super excited because Steve is not a chocolate fan.  So I immediately looked for a recipe, scan my baking cabinet to see if I had the ingredients and headed to the store to get what I was missing.  I couldn’t believe that I was going to try something like this and see how it when.  Well here is the easy recipe I used to it wouldn’t seem to hard and overly complicated and I must admit it was super easy.

  • 110 g / 4 oz dark chocolate
  • 115 g / 4 oz or 8 tbsp butter
  • 2 large eggs
  • 60 g / 6 tbsp flour
  • 80 g / 6 tbsp sugar
  • Dark/white chocolate,cut in small pieces

Directions

  1. Preheat your oven at 400 F (200C).
  2. Melt the chocolate and butter using a double boiler.
  3. Greased 6 individual molds (silicone or large muffin pan).
  4. Use an electric mixer to mix together the eggs with the sugar, until your preparation has a nice light white colour.
  5. Add the flour and mix well.
  6. Add the melted chocolate and mix.
  7. Pour in the molds and add the extra pieces of crushed chocolate in the preparation.
  8. Place in the oven for about 12-13 min and take out.
  9. Let cool down a bit before unmolding.
I will admit that I used twice the amount of chocolate the recipe called for but it was amazing.  I also used chocolate chips and I just melted the butter/margarine in the microwave and then I put a cup of chocolate chips in and followed the rest of the recipe.  The first time I made it I used self rising flour and the entire cake was just gooey and molten inside it was great.  I did the recipe again on Monday (I know two day in a row, Steve loved it so I had to do it again yesterday) I used all purpose flour and it was perfect there was a little cake and the center was perfectly oozing out when you cut into the cake it was great.

Chicken Tikka Masala update

So as you all know last night was new dish night in the Stephens house.  I was so excited I couldn’t wait to make my dish.  Well let me tell you what happened.  First off I killed out pour little griddle.  It was old anyhow but now it makes the task of having pancakes for breakfast anytime soon pretty impossible.  I guess we will be shopping for a new griddle and a stove top grill as a matter of fact in the near future.  About the dish it was looking great, smelled wonderful and everything looked amazing.  Here the finished product in the pot.

Here is the kicker.  It was super spicy.  The yogurt didn’t kill the spice at all.  I couldn’t enjoy the dish as much.  See I am a firm believer in not using Cayenne Pepper.  I don’t like it at all and I always seem to use too much.  Well what was to spicy for me was perfect for my husband and my brother in law.  They enjoyed it much.  Trey on the other hand got mad when some of that heat was on a piece of chicken his father gave him.  LOL.  Well it was an adventure and I will do it again, just not with the pepper and see how the dish turns out. I will give it 4 stars.  Besides the heat it was perfect.  Look out for my other post this week about what new dish is coming to our house next Saturday.
